Caffè Fresco recommends freezing coffee only under one circumstance. When purchasing a large quantity of coffee that will last you more than 14 days, a Value Package for instance, here's what to do:

Freeze SOME of your purchase. Freezing will stop the roast maturation. Upon receiving your large shipment (usually 2 to 3 days out), set aside the bag of coffee you plan to use immediately. Place the remaining unopened bags in its own plastic freezer bag and then store them in the freezer. When needed, remove a bag from the freezer and allow it to thaw in the plastic bag for at least 4 hours before opening. NEVER return the once frozen beans to the freezer. The freezer trip is "one-way-out." After the coffee has thawed the roast maturation will commence.
